The Chinese kind comes in a light, savory garlic sauce that doesn’t mask any of the crispy green deliciousness. Eat all the leaves and the stems. You won’t be sorry. Then have a bite or two of rice, or maybe a spoonful of seafood soup – y’know something a little milder. A clean and ready palate is essential for milking all the enjoyment possible from the crispy-outside, soft-and-savory-inside Stuffed Tofu ($9.00). Other than ground shrimp, who knows what’s inside. Maybe there’s a little gunpowder. Gunpowder is Chinese, after all. And, that would explain the exploding flavors.
